I conquer asparagus



I completely forgot that I took this pic until I downloaded the contents of my camera this morning. Nice, eh? Just look at those veggies!

This was my attempt at cooking asparagus. What you are looking at is lightly poached balsamic asparagus. Delish. At least, the first coupla bites were...then I kinda get turned off. I don't know what it is, but I have some sort of mental block when it comes to eating asparagus. I think it's the whole makes your pee smell funny thing. Bleh.

Anyway. Also on the plate is an eggplant and roasted tomato napoleon topped with roasted red peppers and sitting on a bed of spinach. Again, delish. I have no complaints here.

Along side that is the infamous couscous cake. Dry, bland, boring. I will be reworking this recipe this week and will let you know how it turns out.

Looks yummy! A couple of suggestions on the cous-cous... did you make it with vegetable stock/broth instead of water? That makes cous-cous much tastier, in my opinion. You could also add a red pepper salsa with a bit of chili to make it tastier...

I'm the same way with asparagus. Although I cannot get enough of it when it's grilled! YUM! I lightly coat it with some olive oil, salt, pepper, garlic powder and a little onion powder and grill away! Delicious! I also like it with same "pre-toppings" but roasted and then in the last 10 minutes or so I add some shredded reggiano or parmesan...also delicious! I know the cheese is not vegan but it might be something to try before jumping on the vegan train! :)
